Gluten-free, Grain-free Seeded Loaf Recipe
Grain-free Tigernut Seeded Loaf
ingredients
500g tigernut flour
4 tablespoons walnut oil
2-3 tablespoons roasted pumpkin and sunflower seeds
8g instant yeast
Pinch of sugar
Pinch of salt
instructions
Combine the yeast and sugar in a glass of lukewarm water and allow 15 minutes for the yeast to activate. You will start to see bubbles
Combine the yeast mix with tigernut flour and then add the walnut oil and seeds
Knead the dough until it is soft (not sticky) and add a pinch of salt. Add more oil to reduce stickiness if needed
Keep the bowl of dough aside for 2 hours to raise
Once raised, place on a baking paper dressed with a little flour and knead into shape
Sprinkle seeds and flour on top and bake in oven at 170ºc for 45 minutes
