Dark Chocolate & Tahini Tigernut Cookies
ingredients
2 tablespoons ground flax seeds
6 tablespoons water
3/4 cup tahini
1 cup tigernut flour
1 cup maple syrup
1 tablespoon vanilla extract
2 teaspoon baking powder
1 teaspoon sea salt
1/3 cup chocolate chips
instructions
Preheat oven to 165ºC
In a small bowl, mix ground flax and water and set aside for 10 minutes.
In a medium-size bowl mix tahini, tigernut flour, maple syrup, vanilla extract, baking powder, sea-salt, and flax mixture. Fold in the chocolate chips.
Scoop the dough in equal sizes (about 2 tablespoons) onto a baking sheet and sprinkle flaky salt
Bake in the oven for 12-15 minutes, let cool slightly and enjoy!
