These crispy edged, gooey centre cookies will satisfy your sweet craving and keep you full for HOURS! ⏱️🍪

Dark Chocolate & Tahini Tigernut Cookies

ingredients

  • 2 tablespoons ground flax seeds

  • 6 tablespoons water

  • 3/4 cup tahini

  • 1 cup tigernut flour

  • 1 cup maple syrup

  • 1 tablespoon vanilla extract

  • 2 teaspoon baking powder

  • 1 teaspoon sea salt

  • 1/3 cup chocolate chips 

instructions

  1. Preheat oven to 165ºC

  2. In a small bowl, mix ground flax and water and set aside for 10 minutes.

  3. In a medium-size bowl mix tahini, tigernut flour, maple syrup, vanilla extract, baking powder, sea-salt, and flax mixture. Fold in the chocolate chips.

  4. Scoop the dough in equal sizes (about 2 tablespoons) onto a baking sheet and sprinkle flaky salt

  5. Bake in the oven for 12-15 minutes, let cool slightly and enjoy!
