Gluten-Free, Sugar Free Breakfast Cookies Recipe
Easy Breakfast Cookies
ingredients
1 large ripe banana
2 tablespoons coconut oil
1 teaspoon vanilla extract
1/2 cup tigernut flour
3 tablespoons ground flaxseeds
1/4 teaspoons cinnamon
1/4 teaspoon baking soda
1/8 teaspoon sea salt
2 tablespoons chocolate chips
instructions
Preheat oven to 165ºC
Mash the banana and mix in coconut oil and vanilla extract
Add in the dry ingredients (tigernut flour, ground flaxseeds, cinnamon, baking soda, sea salt)
Fold the chocolate chips into the dough
Scoop the dough in equal sizes (about 2 tablespoons) onto a baking sheet
Bake for 15 minutes
