Gluten-Free, Vegan Chai Cookies Recipe
Vegan Chai Cookies
ingredients
1 tablespoons ground flax seeds
3 tablespoons water
1 cup oats
3/4 cup Tigernut Flour
1 1/2 teaspoons baking soda
1/4 cup peanut butter
1/2 cup maple syrup
1 1/2 teaspoon chai spice (we used Chai by mira)
1 teaspoon cinnamon (reduce if there is already a lot in your Chai Spice)
instructions
Preheat oven to 165ΒΊC
In a small bowl, mix ground flax and water and set aside for 10 minutes.
In a medium-size bowl mix oats, tigernut flour, baking powder, chai spice and cinnamon
In a separate bowl mix flax combo, peanut butter and maple syrup
Scoop the dough in equal sizes (about 2 tablespoons) onto a baking sheet
Bake in the oven for 15 minutes, let cool slightly and enjoy!
