Vegan Tigernut Mince Pie Recipe

These gluten-free, dairy-free, sugar-free, vegan mince pies are proof that you can enjoy Christmas treats whilst staying healthy! Recipe by @kcs_cocina

Vegan Tigernut Mince Pies

ingredients

For the dough

  • 100g tigernut flour

  • 100g oat flour

  • 6-7 tablespoons melted coconut oil

  • 2 tablespoons maple syrup (optional)

  • 1/4 teaspoons sea salt

For the filling:

  • 75g mixed fruit, seeds and nuts (optional

  • 1 tablespoon coconut oil

  • 1 tablespoon water

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • juice of 1/2 an orange & zest

instructions

  1. Combine all the dough ingredients and mix to create a dough. Add more coconut oil if you need it. If you opt for no maple syrup you will need more coconut oil so that it all comes together.

  2. Press the dough into lined a lined cupcake tray. Make sure to get high on the sides so you have little cases for your filling.

  3. Pre-heat the oven to 180°c

  4. Combine the filling ingredients in a saucepan and heat on a low heat for 10 minutes

  5. Fill the mince pie cases and place in oven for 15 minutes until the edges are golden brown

  6. Let them cool and then sprinkle with desiccated coconut (optional)
