Tigernut Protein Energy Balls

ingredients

  • 1/2 cup strp’d tigernut flour

  • 1/4 cup coconut oil

  • 3 pitted medjool dates

  • 2-3 tablespoons raw cacao powder

  • 1 tablespoon collagen or hemp protein powder

  • A splash of water or plant-based milk of choice

instructions

  1. Place all ingredients into a blender/food processor and blitz until you get a thick mixture

  2. Spoon the mixture into a bowl and roll into small balls

  3. Roll the balls in a light dusting of cacao powder if you want an even more intense chocolate flavour

  4. Line a baking tray or dish with parchment paper and place balls on to it

  5. Chill in freezer to set for approx 15 minutes
