Paleo Pancackes

ingredients

  • 1 cup tigernut flour

  • 1/2 cup tapioca flour

  • 1 tablespoon coconut sugar

  • 1 and 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon sea salt

  • 1/2 cup non-dairy milk of choice (add more if batter is too thick)

  • 1/2 tablespoon lemon juice

  • 2 large eggs

  • 2 tablespoons coconut oil melted

  • 1 teaspoon vanilla extract

  • cooking oil spray

instructions

  1. Whisk together the non-dairy milk and lemon juice to make a non-dairy “buttermilk” and let it sit for 5 mins

  2. In a large bowl, mix dry ingredients (tigernut flour, tapioca flour, coconut sugar, baking powder, baking soda, cinnamon, sea salt) until no lumps remain

  3. In another large bowl, whisk wet ingredients (‘buttermilk', eggs, melted coconut oil, vanilla extract) until lots of bubbles have formed

  4. Combine wet and dry ingredients and mix until smooth. The batter should be somewhat thin. If too thick, add more non-dairy milk

  5. Heat a pan on medium heat and spray lightly with cooking oil. Once pan is hot, pour a heaping 1/8 cup of batter to make pancakes. Cook for about 90 seconds and then flip

  6. Add a topping of your choice and enjoy!
