Grain-Free Tigernut Cookies

ingredients

  • 1 cup tigernut flour

  • 1/3 cup coconut sugar

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon sea salt

  • 1/4 cup chocolate chips

  • 3 tablespoons coconut oil

  • 1/4 cup maple syrup

  • 2 teaspoons vanilla extract

instructions

  1. Preheat oven to 175°C

  2. Mix dry ingredients in a mixing bowl (tigernut flour, coconut sugar, baking soda, sea salt, chocolate chips). Stir with a wooden spoon until no clumps of flour or sugar remain and the mixture is evenly mixed.

  3. In another bowl, whisk together the wet ingredients (coconut oil, maple syrup, vanilla extract)

  4. Combine both the wet and dry ingredients and fold in the chocolate chips

  5. Form cookie dough into 9-10 equal sized balls and space evenly on the baking sheet, (top tip: use an ice cream scooper helps get them the same size). If you fancy a crispier cookie, flatten them out with a rolling pin, or the palm of your hand.

  6. Pop in the oven and bake for 15 minutes or until they are a light golden brown

  7. Remove from the oven and let them cool for 10 minutes before digging in

  8. Enjoy!
