Christmas Spiced Granola

ingredients

  • 1 cup tigernut flakes

  • 1 cup shredded coconut

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1 teaspoon cinnamon

  • 1/2 teaspoon all spice

  • 1/4 cup pumpkin seeds

  • 1/4 cup cranberry

ingredients

  1. Preheat the oven to 180 C Line a baking sheet with parchment paper

  2. Mix the flakes, coconut, seeds, maple and spices in a large bowl, then evenly spread onto the baking sheet

  3. Bake for 35-40 minutes, stirring every 15 minutes or so. Check the granola at 35 to make sure it isn’t burning. It may still seem a bit moist at 40 but take it out as it will dry as it cools.

  4. Add in the cranberry
