Fluffy Tigernut Flour Pancakes Recipe

Fluffy free-from pancakes

ingredients

  • 300ml non-dairy milk (we used Oatly Semi)

  • 1/2 tablespoon squeezed lemon

  • 1/2 cup tigernut flour

  • 1/2 cup oat flour

  • 1 tablespoon maple syrup

  • 1 and 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon sea salt

  • 2 eggs

  • 1 tablespoon butter or oil of choice

  • 1 teaspoon vanilla extract

  • cooking oil spray

instructions

  1. Heat a pan on medium heat so that it is evenly heated once your batter is ready to pour

  2. Whisk together the non-dairy milk and lemon juice to make a non-dairy “buttermilk” and let it sit for 5 mins

  3. In a large bowl, mix dry ingredients (tigernut flour, oat flour, baking powder, baking soda, cinnamon, sea salt) until no lumps remain

  4. In another large bowl, whisk wet ingredients (‘buttermilk', eggs, oil, maple syrup, vanilla extract)

  5. Combine wet and dry ingredients and mix until smooth (we used a blender). The thicker your batter, the fluffier your pancakes

  6. Spray heated pan lightly with cooking oil. Once pan is hot, pour batter to make pancakes. Cook for about 90 seconds and then flip

  7. Add a topping of your choice and enjoy!
