Rose Pistachio Tahini Cookies
ingredients
1 tablespoon flaxseed meal or 1 egg
3 tablespoons water
1/3 cup tahini or almond butter
1/4 cup honey
3/4 cup strp’d tigernut flour
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch sea salt
2 tablespoons crushed pistachio
2 tablespoons dried rose petals
instructions
Mix the water and flaxseed and leave aside to create a flax egg
Mix all dry ingredients together in a large mixing bowl )save some of the pistachio and rose to top!
Add in all the wet ingredients and roll into a dough, which you can refrigerate for 30 minutes
Preheat oven to 180c degrees
Scoop the cookie dough onto a baking sheet with parchment paper, top with rose, pistachio & sea salt and bake at 180 for about 10-12 minutes
Let them cool, and then enjoy!
