Free-From Pumpkin Loaf

ingredients

  • 1 + 3/4 cup mashed roasted pumpkin

  • 1 cup tigernut flour

  • 1/2 cup coconut flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 2 eggs

  • 1 cup milk of choice

  • 1/4 cup coconut sugar

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon activated charcoal


instructions

  1. Preheat oven to 180ºC

  2. In a large bowl mix the pumpkin puree, tigernut flour, coconut flour and baking soda

  3. In a blender add the milk & dates, pulse until the mixture has an even consistency. Note: use a blender, a food processor won’t work.

  4. Add the contents from the blender to the large bowl and combine

  5. Add the pumpkin pie spice, cinnamon and nutmeg to the bowl and mix well

  6. In a separate bowl, whisk the eggs and add to the large bowl until everything is evenly mixed

  7. Separate out the batter into two bowls 2/3 and 1/3 and add activated charcoal to the 1/3 portion, mix till black

  8. Line a loaf tin with parchment paper and using an ice cream scooper alternate the two batters to create the swirl effect: 2 scoops regular batter, 1 scoop black batter

  9. Place the baking dish in the oven for 1 hour or until a toothpick comes out clean

  10. Cool before slicing
