High Fibre Granola Bars

ingredients

  • 1/3 cup strp’d tigernut flakes

  • 15-20 medjool dates

  • 1 cup almonds

  • 1/2 cup cashews

  • 3/4 cup dessicated coconut

  • 2 cups rolled oats

  • 3 tablespoons flaxseeds

  • 2 tablespoons water

  • 1/4 cup dried cranberries (optional)

instructions

  1. Blend together all the ingredients

  2. Scoop the mixture onto a lined pan and cover with another sehet of parchment paper

  3. Firmly presss the mixture to the sides of the pan with your hands. Then use a measuring cup to smoothand flatten the tips of the bars

  4. Transfer the pan into the fridge and allow the mixture to chill for an hour before you slice and eat the bars
