Guilt-free Waffles

ingredients

  • 3/4 cup tigernut flour

  • 1/2 cup cassava flour

  • 1 teaspoons baking soda

  • 1/4 teaspoons vanilla

  • 1 cup plant-based or regular milk

  • 1/4 cup mild coconut oil / melted butter

  • 3 teaspoons apple cider vinegar

instructions

  1. Mix all dry ingredients together with a whisk in a large bowl.

  2. Pour in the wet ingredients. Mix well. Batter will be thick.

  3. Preheat waffle iron. Spray LIBERALLY with non-stick spray.

  4. Scoop 1/4 cup batter into the middle of your waffle pan.

  5. Close waffle iron and use according to its instructions or until waffles are golden brown! Don't open too early or they will stick!!

  6. Add your favourite toppings and enjoy!
