Vanilla Tigernut Muffins recipe

When you want to be healthy but are craving something sweet and oh so satisfying 🍋

Vanilla lemon-glazed muffins

ingredients

For the muffins:

  • 1 and 3/4 cups Tigernut flour

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon sea salt

  • 2 eggs

  • 2 tablespoons melted coconut oil

  • 1/4 cup non-dairy milk of choice

  • 1/4 cup maple syrup

  • 1 teaspoon vanilla extract

For the glaze:

  • 1 teaspoon coconut flour

  • 2 tablespoons melted coconut oil

  • 2 tablespoons honey

  • 1 teaspoon lemon juice

  • zest 1/2 lemon

  • pinch of sea salt

instructions

  1. Preheat oven to 175ºC and line a muffin tray

  2. Combine all dry ingredients (tigernut flour, baking soda, sea salt)

  3. In a separate bowl, whisk the eggs, coconut oil, non-dairy milk, maple syrup and vanilla extract

  4. Create a well in the dry ingredients, add the wet ingredients and mix well

  5. Fill muffin liners two thirds full and bake for 25-30 minutes until a toothpick inserted in the middle comes out clean

  6. Combine all glaze ingredients and mix well

  7. Let the muffins cool for 10 minutes before topping with the glaze
