Vanilla Tigernut Muffins recipe
Vanilla lemon-glazed muffins
ingredients
For the muffins:
1 and 3/4 cups Tigernut flour
1/4 teaspoon baking soda
1/4 teaspoon sea salt
2 eggs
2 tablespoons melted coconut oil
1/4 cup non-dairy milk of choice
1/4 cup maple syrup
1 teaspoon vanilla extract
For the glaze:
1 teaspoon coconut flour
2 tablespoons melted coconut oil
2 tablespoons honey
1 teaspoon lemon juice
zest 1/2 lemon
pinch of sea salt
instructions
Preheat oven to 175ºC and line a muffin tray
Combine all dry ingredients (tigernut flour, baking soda, sea salt)
In a separate bowl, whisk the eggs, coconut oil, non-dairy milk, maple syrup and vanilla extract
Create a well in the dry ingredients, add the wet ingredients and mix well
Fill muffin liners two thirds full and bake for 25-30 minutes until a toothpick inserted in the middle comes out clean
Combine all glaze ingredients and mix well
Let the muffins cool for 10 minutes before topping with the glaze
