Gluten-Free, Vegan Tigernut Tahini Cookies Recipe
Tigernut Tahini Cookies
Ingredients
1 tbsp flaxseed meal
3 tbsp water
1/2 cup tigernut flour
1 tsp baking soda
1 tsb baking powder
1/4 cup honey
1/2 cup tahini
1/8 teaspoon sea salt
1/4 cup raw honey
Instructions
Preheat oven to 165ºC
Mix the water and flaxseed meal together in a small bowl and let sit in the fridge for 5 mins to create a flax egg
Meanwhile, mix all dry ingredients (tigernut flour, baking soda, baking powder)
Mix in the flax egg, tahini & honey with the dry ingredients and add a pinch of sea salt
Form cookie dough into 9-10 equal balls and space evenly (about 2 inches apart) onto baking sheet
Bake for 10 minutes or until they are lightly golden brown
Remove and let cool for a couple of minutes before enjoying
