One of my favourite guilt-free indulgences! Stripped of all nasties but tastes like the real deal!

Paleo Skillet Cookie

ingredients

  • 2 cups tigernut flour

  • 1/2 tablespoon baking powder

  • 1/2 teaspoon flaky sea salt

  • 1 cup brown sugar or coconut sugar

  • 1/2 cup butter or coconut oil

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup chocolate chunks/chips

instructions

  1. Preheat oven to 180ºC

  2. Whip the butter/coconut oil and sugar until fully combined and fluffy

  3. Add the egg and vanilla and whip

  4. Sieve the flour and mix with sea salt and baking powder

  5. Combine wet and dry ingredients

  6. Add chocolate chunks and sprinkle more sea salt on top

  7. Split into two smaller skillets or one large skillet (leave some space as it will rise!)

  8. Bake at 180ºC for about 30 minutes until fully cooked

  9. Top with ice cream and enjoy!
