Rose Pistachio Tahini Cookies Recipe

Rose Pistachio Tahini Cookies

ingredients

  • 1 tablespoon flaxseed meal or 1 egg

  • 3 tablespoons water

  • 1/3 cup tahini or almond butter

  • 1/4 cup honey

  • 3/4 cup strp’d tigernut flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 pinch sea salt

  • 2 tablespoons crushed pistachio

  • 2 tablespoons dried rose petals

instructions

  • Mix the water and flaxseed and leave aside to create a flax egg

  • Mix all dry ingredients together in a large mixing bowl )save some of the pistachio and rose to top!

  • Add in all the wet ingredients and roll into a dough, which you can refrigerate for 30 minutes

  • Preheat oven to 180c degrees

  • Scoop the cookie dough onto a baking sheet with parchment paper, top with rose, pistachio & sea salt and bake at 180 for about 10-12 minutes

  • Let them cool, and then enjoy!
