Vegan, Gluten Free Pecan Pie
ingredients
1 and 1/2 cups strp’d tigernut flour
1/2 cup coconut flour
6 tablespoons coconut oil
1 teaspoon vanilla
400ml coconut milk
6 tablespoons maple syrup
100g chopped pecans
instructions
Combine the coconut milk and maple syrup in a pan and bring to boil for a minute then reduce to a low heat and let it simmer for 20 minutes
After 20 minutes add the chopped pecans
Bake in oven for 15 minutes at 175°C
Mix tigernut flour, coconut flour, coconut oil and vanilla until no clumps remain.
For the base: layer a round baking tin with baking paper and press the above mix down into the tin. The mix will be a bit crumbly. Bake for 15 minutes at 175°C.
Pour the coconut milk, pecan mix on top of the base and let it cool (or refrigerate)
