Tigernut Mango Crumble

ingredients

  • 1 and a 1/2 cups strp’d tigernut flour (sifted)⁠

  • 2/3 cup brown sugar

  • 1 stick of butter, cold and cut into pieces

  • 1 and 1/4 cup old fashioned oats

  • 3 teaspoons ground cinnamon

  • 1 teaspoon ground nutmeg

  • 4 ripe mangoes, pealed and cut

  • Juice from one medium lime

instructions

  1. Preheat oven to 175 degrees C, grease a baking dish

  2. Mix the tigernut flour, brown sugar, cinnamon, nutmeg, oats and butter. Stir well

  3. Place the mango pieces in the greased baking dish and drizzle the juice of the lime

  4. Cover the fruit with the flour topping and sprinkle some more cinnamon and nutmeg

  5. Bake for about 20 minutes in the oven until the top has browned and the fruit is tender
