Italian-herbed Tigernut Crackers

ingredients

  • 1 cup tigernut flour

  • 1 teaspoon baking powder

  • 1 teaspoon olive oil

  • 1 teaspoon dried oregano

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1 tablespoon water

instructions

  1. Preheat oven to 200ºC

  2. Combine all ingredients, adding the water last and knead with your hands until everything is combined

  3. On a hard, flat surface place the dough ball between 2 sheets of parchment paper and roll it out with a rolling pin (about 1/8 inch thick)

  4. Remove the top sheet and cut out squares or rectangles

  5. Bake in the oven for 13-15 minutes

  6. Remove and let cool completely before storing in an airtight container
