Italian-herbed Tigernut Crackers
ingredients
1 cup tigernut flour
1 teaspoon baking powder
1 teaspoon olive oil
1 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon water
instructions
Preheat oven to 200ºC
Combine all ingredients, adding the water last and knead with your hands until everything is combined
On a hard, flat surface place the dough ball between 2 sheets of parchment paper and roll it out with a rolling pin (about 1/8 inch thick)
Remove the top sheet and cut out squares or rectangles
Bake in the oven for 13-15 minutes
Remove and let cool completely before storing in an airtight container
