Grain-free Vegan Brownies

ingredients

  • 60g tigernut flour

  • 30g cassava flour

  • 2 teaspoon baking powder

  • 1/2 teaspoon sea salt

  • 55g unrefined cane sugar

  • 1 teaspoon vanilla essence

  • 30g cocoa powder

  • 45g dark chocolate chips

  • 75ml oil of choice

  • 125ml non-dairy milk of choice


instructions

  1. Preheat oven to 180ºC

  2. Mix the wet ingredients

  3. Add the dry ingredients and mix well 

  4. Pour mix into a 20cm square lined baking tin and tap to remove air bubbles

  5. Bake for 20-25 mins

  6. Leave to cool before cutting into 12 pieces.
