Chocolate Chip Pancakes

ingredients

  • 3/4 cup @strp.d Tigernut Flour

  • 4 whole Eggs, whisked

  • 1 tsp Apple Cider Vinegar

  • 1 tsp Vanilla Extract

  • 1/4 cup Coconut Flour

  • 1/4 cup Coconut Palm Sugar

  • 1/2 tsp Baking Powder

  • 1 tsp Baking Soda

  • 1/4 tsp Sea Salt

  • Handful Chocolate Chips

instructions

  1. Mix all wet ingredients together in medium sized bowl.

  2. In separate small bowl, combine dry ingredients.

  3. Gradually whisk dry ingredients into wet mixture, until well combined and lump free. Set aside.

  4. Melt a small amount of (coconut oil/butter) in a frying pan on low heat.

  5. Drop 3-4 tbs of batter into the centre of the pan until bubbles appear and then flip.

  6. Heat for another 15-30 secs before removing from the pan.

  7. Repeat with remainder of batter, adding additional oil to the pan as needed.⁣⁣
