Gluten-Free, Vegan Chai Cookies Recipe

The perfect accompaniment to your Gingerbread or Chai latte 🍁

Vegan Chai Cookies

ingredients

  • 1 tablespoons ground flax seeds

  • 3 tablespoons water

  • 1 cup oats

  • 3/4 cup Tigernut Flour

  • 1 1/2 teaspoons baking soda

  • 1/4 cup peanut butter

  • 1/2 cup maple syrup

  • 1 1/2 teaspoon chai spice (we used Chai by mira)

  • 1 teaspoon cinnamon (reduce if there is already a lot in your Chai Spice)

instructions

  1. Preheat oven to 165ºC

  2. In a small bowl, mix ground flax and water and set aside for 10 minutes.

  3. In a medium-size bowl mix oats, tigernut flour, baking powder, chai spice and cinnamon

  4. In a separate bowl mix flax combo, peanut butter and maple syrup

  5. Scoop the dough in equal sizes (about 2 tablespoons) onto a baking sheet

  6. Bake in the oven for 15 minutes, let cool slightly and enjoy!
