Banana Bread Baked “Oats”

ingredients

  • 100g strp’d tigernut flour (sifted)⁠

  • 1 medium ripe banana

  • 1 tbsp coconut oil

  • ¼ cup almond milk

  • 1 tsp baking powder

  • ¼ tsp sea salt

  • ¼ tsp cinnamon

  • 1 tbsp chopped dark chocolate (optional for topping)

    instructions

  1. Preheat oven to 175 degrees C.

  2. In a small blender, blend all the ingredients (except the chocolate) until smooth.

  3. Pour the mixture into a small baking dish

  4. Top the batter with chocolate chips and then bake for 18-22 minutes

  5. Let it cool for 5 minutes and then devour immediately
