Vegan Apple Cinnamon Christmas Cake Recipe

Delicious & nutritious festive treat. Recipe adapted from @sonalicooks

Vegan Apple Christmas Cake

ingredients

  • 312g Tigernut flour

  • 1 and 1/2 teaspoons baking soda

  • 1/2 teaspoon sea salt

  • 1 and 1/2 teaspoons cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon cardamom

  • 250g brown sugar

  • 1 tablespoon fresh lemon juice

  • 240ml non-dairy milk of choice

  • 80ml extra virgin olive oil

  • 1 teaspoon vanilla extract

  • 1 tablespoon apple cider vinegar

  • 2 tablespoons apple sauce

  • 2 apples, peeled and chopped into cubes

instructions

  1. Preheat oven to 180ºC and grease a Bundt tin

  2. Add the lemon juice to the non-dairy milk and leave aside for 5 minutes to create a vegan ‘buttermilk’

  3. Combine all dry ingredients through a sieve (tigernut flour, baking soda, sea salt, spices, sugar)

  4. In a separate bowl, whisk the buttermilk, oil, vanilla, apple cider vinegar and applesauce.

  5. Create a well in the dry ingredients, add the wet ingredients and mix well.

  6. Add the chopped apples

  7. Bake for 45-55 minutes in the oven until a toothpick comes out clean
