Tigernut Protein Energy Balls
ingredients
1/2 cup strp’d tigernut flour
1/4 cup coconut oil
3 pitted medjool dates
2-3 tablespoons raw cacao powder
1 tablespoon collagen or hemp protein powder
A splash of water or plant-based milk of choice
instructions
Place all ingredients into a blender/food processor and blitz until you get a thick mixture
Spoon the mixture into a bowl and roll into small balls
Roll the balls in a light dusting of cacao powder if you want an even more intense chocolate flavour
Line a baking tray or dish with parchment paper and place balls on to it
Chill in freezer to set for approx 15 minutes
