Vegan, Gluten Free Pecan Pie

ingredients

  • 1 and 1/2 cups strp’d tigernut flour

  • 1/2 cup coconut flour

  • 6 tablespoons coconut oil

  • 1 teaspoon vanilla

  • 400ml coconut milk

  • 6 tablespoons maple syrup

  • 100g chopped pecans

instructions

  1. Combine the coconut milk and maple syrup in a pan and bring to boil for a minute then reduce to a low heat and let it simmer for 20 minutes

  2. After 20 minutes add the chopped pecans

  3. Bake in oven for 15 minutes at 175°C

  4. Mix tigernut flour, coconut flour, coconut oil and vanilla until no clumps remain.

  5. For the base: layer a round baking tin with baking paper and press the above mix down into the tin. The mix will be a bit crumbly. Bake for 15 minutes at 175°C.

  6. Pour the coconut milk, pecan mix on top of the base and let it cool (or refrigerate)
