Gluten-Free Tigernut Chocolate Chip Cookies Recipe

The classic chocolate chip cookie made gluten free and low in sugar

Gluten-Free Chocolate Chip Cookies

ingredients

  • 160g tigernut flour

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon sea salt

  • 40g brown sugar or coconut sugar

  • 60g unsalted butter or coconut oil

  • 1 egg

  • 1 teaspoon vanilla extract

  • 65g chocolate chips

instructions

  1. Preheat oven to 175°C

  2. Mix dry ingredients in a mixing bowl (tigernut flour, brown sugar, baking soda, sea salt) until no clumps remain.

  3. In another bowl, whisk together the wet ingredients (egg, vanilla extract, butter)

  4. Combine both the wet and dry ingredients and fold in the chocolate chips

  5. Form cookie dough into 9-10 equal sized balls and space evenly on the baking sheet. Flatten the balls with the back of a spoon so that they are shaped how you would want them to look when they are baked. (cookie will retain the shape)

  6. Pop in the oven and bake for 10 minutes or until they are a light golden brown

  7. Remove from the oven and let them cool for 10 minutes before digging in
