Chickpea-free Beetroot Hummus

ingredients

  • 1 cup tigernut flour

  • 1/4 cup lemon juice

  • 1/4 cup tahini

  • 1/2 cup yoghurt

  • 3-4 small garlic cloves, minced

  • 2 tablespoons extra-virgin olive oil

  • 1 roasted beetroot

  • salt to taste

  • 2 tablespoons water (if needed)

instructions

  1. Blend all ingredients together until smooth and creamy!

  2. Top with drizzled olive oil, sumac and zataar!
